Strawberry Spinach Salad

Serves 10-12

 

11/2 cups fresh sliced strawberries

3 cups tightly packed spinach

11/2 cups romaine lettuce

1/2 cup celery, diagonally sliced

1 tbsp sliced almonds

 

Dressing:

1 cup strawberry vinegar  ( haven't been able to find in the local stores??)

1 tbsp olive oil

1/2 tsp salt

1/2 tsp pepper

1/2 tsp sugar

 

Combine strawberries, spinach, lettuce, celery and almonds in a large bowl. Toss gently. In a separate bowl, combine dressing ingredients. Mix well. Pour dressing over salad mixture. Toss and serve on frosted plates with whole strawberry garnish.

 

Strawberry Pie

 

A cooked pie shell.

Fill with whole strawberries, line pastry shell.

 

Cook until thick and clear.

1 cup crushed strawberries

1 cup sugar

3 Tbsp. corn starch

dash of salt

When taken from heat add 1 Tbsp butter.

Pour over whole strawberries, serve with whip cream. 

 

 

 

Strawberry Frosty

 

2 cups   milk, divided

3/4 cup  strawberries or raspberries, fresh or frozen

2 tbsp.   sugar

 

Freeze 1 cup milk in ice cube tray.

Place frozen milk cubes in blender with fruit, sugar and 1 cup milk.

Blend for approximately 1 minute.

Makes 2-3 servings.

 

 

 

Strawberry Muffins

 

1 1/4 cups white sugar                 1/2 cup milk

1/2   cup margarine                      2 cups quartered fresh strawberries

2 eggs                                        1/4 cup flour

1 3/4 cups flour                            2 tsp sugar

2 tsp baking powder

1/2 tsp salt

 

Cream together sugar and margarine. Add eggs, one at a time. Mix together flour, baking powder and salt thoroughly. Add dry ingredients alternately with milk. gently mix together strawberries and 1/4 cup flour. Fold into batter. fill greased large muffin cups 2/3 full. Sprinkle with 2 teaspoons of sugar. Bake at 375 for 25 to 30 minutes. Watch after 20 minutes.

 

 

Strawberry Squares

 

3/4 cup butter

1/4 cup sugar

11/2 cup flour

1/4 tsp salt

2 cups strawberries

1 egg

1/4 cup brown sugar

1/2 tsp vanilla

1/2 cup coconut flakes

 

Mix butter, sugar, flour and salt together, press into 9 inch square pan. Combine (fresh or frozen) strawberries sliced with remaining ingredients and spread over base. Bake 50 min. at 375.

Cut in squares and serve warm or cold.
